Ingredients

  • Whole chicken breast
  • Olive oil
  • Fresh garlic, minced
  • Fresh parsley, chopped
  • Fresh thyme
  • Dijon mustard
  • Lemon juice
  • Chicken broth
  • Baby yellow potatoes
  • Baby red potatoes
  • Salt and black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, minced garlic, chopped parsley, thyme leaves, Dijon mustard, lemon juice, salt, and black pepper. Coat the chicken breast thoroughly with this marinade.

  4. Place the marinated chicken in a baking dish and arrange the potatoes around it. Pour chicken broth into the dish.
  5. Roast for about 50 minutes or until the chicken is golden brown and cooked to an internal temperature of 165°F (75°C) while ensuring the potatoes are tender.
