  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream (or plain Greek yogurt)
  • ¼ cup all-purpose flour
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together 1 cup softened unsalted butter and ½ cup granulated sugar until fluffy. Add 2 cups all-purpose flour and ¼ teaspoon salt; mix until crumbly. Press into the prepared pan.
  3. Bake the crust for 15 minutes.
  4. While the crust bakes, combine 3 cups diced fresh peaches, ¼ cup sugar, 1 tablespoon lemon juice, and 1 tablespoon cornstarch in another bowl.
  5. Spread the peach mixture over the crust.
  6. In a separate bowl, whisk together 2 large eggs, ¾ cup sugar, ½ cup sour cream (or Greek yogurt), ¼ cup flour, and ½ teaspoon vanilla extract until smooth; pour over peaches.
  7. Bake for an additional 35-40 minutes until lightly golden brown.
  8. Let cool completely before slicing.
