Ingredients

  • 8 digestive biscuits (or equal weight oats)
  • 20 g soy protein crisps (or 1 extra biscuit or equal parts oats)
  • 30 g light butter (or normal butter or oil)
  • 1 tbsp milk
  • 250 g light cream cheese
  • 350 g yogurt (vanilla or plain)
  • 2 eggs
  • 100 g granulated zero calorie sweetener (or any granulated sweetener of choice)
  • 60 g vanilla protein powder (or cornstarch or flour)
  • 2 tsp vanilla
  • 1 lemon, juiced
  • 1 lemon, zest
  • 150 g raspberries (fresh or frozen)

Instructions

  1. Preheat oven to 160°C (320°F).
  2. Add biscuits and soy protein crisps into a food processor. Blend until finely crushed.
  3. Pour in melted butter, blend until you have a slightly sticky crumble.
  4. Transfer this mixture into a brownie pan lined with parchment paper and press down evenly.
  5. Bake crust for about 10 minutes; let it cool.
  6. Add all cheesecake filling ingredients into a medium bowl and whisk until well combined without clumps.
  7. Layer raspberries on top of cooled crust, pour half of the cheesecake batter over them, add more raspberries, then pour remaining batter on top.
  8. Bake for about 30-40 minutes until set; cool slightly before refrigerating for at least five hours.
  9. Slice into 12 servings and enjoy.
