  • Âľ cup (90g) whole wheat flour or gluten-free flour
  • 1 ½ tsp baking powder
  • 1 tsp ground ginger
  • ÂĽ tsp ground cinnamon
  • â…› tsp ground nutmeg
  • â…› tsp ground cloves
  • ÂĽ tsp salt
  • 1 ½ tbsp unsalted butter or coconut oil, melted
  • 1 large egg white (room temperature)
  • 1 tsp vanilla extract
  • ÂĽ cup (60mL) molasses
  • 5 tbsp (75mL) nonfat milk (room temperature)

Instructions

  1. In a medium bowl, mix the oats, flour, baking powder, ginger, cinnamon, nutmeg, cloves, and salt.
  2. In another bowl, whisk together melted butter or coconut oil with egg white and vanilla until well blended. Stir in molasses and then gradually mix in milk.
  3. Combine the dry ingredients with the wet mixture until just combined. Chill dough for about 30 minutes in the refrigerator.
  4. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
  5. Drop rounded scoops of dough onto the baking sheet and flatten to about â…ś inch thick.
  6. Bake for approximately 7–10 minutes until lightly golden. Cool on the pan for about 10 minutes before transferring to a wire rack.
