Ingredients

- 1 cup cooked quinoa
- 1 cup broccoli florets
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- Salt, black pepper, garlic powder to taste
- 1 tsp olive oil
- Optional: Lemon wedge for serving
Instructions
- Rinse quinoa under cold water and combine it with 2 cups of water in a pot. Bring to a boil, then reduce heat and simmer until fluffy (12-15 minutes). Set aside.
- Season salmon with salt, black pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook the salmon skin-side down for about 4-5 minutes per side until golden brown.
- Steam broccoli in a steamer basket over boiling water for 4-5 minutes until tender. Slice cucumber and halve cherry tomatoes.
- On a plate, arrange the salmon next to a scoop of quinoa and add steamed broccoli, cucumber slices, and cherry tomatoes. Serve warm with a lemon wedge if desired.
