  • Salt & black pepper
  • 1 medium sweet potato, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt to taste
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 1 cup mixed greens or chopped romaine
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • Salt & pepper
  • 2 tbsp plain Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp chopped parsley or cilantro
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F). Toss sweet potato wedges with olive oil, paprika, and salt; arrange on a baking sheet. Bake for 25-30 minutes, flipping halfway through.
  2. Coat chicken strips in olive oil, garlic powder, oregano, salt, and black pepper; grill or pan-sear over medium heat for 4-5 minutes per side until cooked through.
  3. In a bowl, combine mixed greens, diced avocado, cherry tomatoes, and red onion. Drizzle with olive oil and lemon juice; season with salt and pepper; toss gently.
  4. For the herbed yogurt sauce, mix Greek yogurt with lemon juice, chopped herbs, salt, and pepper until smooth.
  5. Serve grilled chicken alongside roasted sweet potatoes and avocado salad; drizzle with the herbed yogurt sauce.
