Ingredients
- 1 chicken breast, sliced into strips

- Salt & black pepper
- 1 medium sweet potato, cut into wedges
- 1 tbsp olive oil

- 1 tsp lemon juice

Instructions
- Preheat your oven to 200°C (400°F). Toss sweet potato wedges with olive oil, paprika, and salt; arrange on a baking sheet. Bake for 25-30 minutes, flipping halfway through.
- Coat chicken strips in olive oil, garlic powder, oregano, salt, and black pepper; grill or pan-sear over medium heat for 4-5 minutes per side until cooked through.
- In a bowl, combine mixed greens, diced avocado, cherry tomatoes, and red onion. Drizzle with olive oil and lemon juice; season with salt and pepper; toss gently.
