Ingredients

  • Chicken breast chunks

  • Fresh mixed greens
  • Cherry tomatoes, halved
  • Cucumber chunks
  • Red onion, diced
  • Greek yogurt
  • Grated cucumber
  • Fresh dill

Instructions

  1. Marinate chicken in olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper for 15 minutes.
  2. Preheat grill or grill pan over medium-high heat and grill chicken for 5-7 minutes per side until cooked through.
  3. Layer fresh mixed greens in a serving bowl and top with halved cherry tomatoes, cucumber chunks, and diced red onion.
  4. For the tzatziki sauce, mix Greek yogurt with grated cucumber, minced garlic, fresh dill, lemon juice, olive oil, salt, and pepper until smooth.
