Ingredients
- 1 1/4 cup pumpkin puree
- 3 large eggs
- 2 cups gluten-free flour blend
- 3/4 cup corn or vegetable oil
- 1 cup sugar
- 1 cup brown sugar
- 1 Tablespoon ground cinnamon
- 1 tsp. ground ginger
- 3/4 tsp. ground nutmeg
- 1 tsp. salt
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. ground cloves
- For the Streusel Topping: 1/2 cup brown sugar, 1/3 cup gluten-free flour blend, 2 Tablespoons sugar, 2 Tablespoons cinnamon, 1/4 cup butter (melted)
- For the Maple Glaze: 1/4 cup butter, 1 cup powdered sugar, 2 Tablespoons pure maple syrup, pinch of salt, 2–3 Tablespoons milk
Instructions
- Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper and non-stick spray.
- In a bowl, whisk together pumpkin puree, oil, eggs, and sugars until smooth.
- In another bowl, combine gluten-free flour blend with spices and leavening agents.
- Mix dry ingredients into wet ingredients until just combined.
- Pour batter into the prepared pan. Prepare the streusel by mixing ingredients until crumbly; sprinkle over the batter.
- Bake for 60–80 minutes or until a toothpick comes out clean.
- While baking, prepare the maple glaze by melting butter and mixing it with powdered sugar and maple syrup until smooth.
- Cool the bread before drizzling with glaze.
