  • 1 1/4 cup pumpkin puree
  • 3 large eggs
  • 2 cups gluten-free flour blend
  • 3/4 cup corn or vegetable oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 Tablespoon ground cinnamon
  • 1 tsp. ground ginger
  • 3/4 tsp. ground nutmeg
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. ground cloves
  • For the Streusel Topping: 1/2 cup brown sugar, 1/3 cup gluten-free flour blend, 2 Tablespoons sugar, 2 Tablespoons cinnamon, 1/4 cup butter (melted)
  • For the Maple Glaze: 1/4 cup butter, 1 cup powdered sugar, 2 Tablespoons pure maple syrup, pinch of salt, 2–3 Tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper and non-stick spray.
  2. In a bowl, whisk together pumpkin puree, oil, eggs, and sugars until smooth.
  3. In another bowl, combine gluten-free flour blend with spices and leavening agents.
  4. Mix dry ingredients into wet ingredients until just combined.
  5. Pour batter into the prepared pan. Prepare the streusel by mixing ingredients until crumbly; sprinkle over the batter.
  6. Bake for 60–80 minutes or until a toothpick comes out clean.
  7. While baking, prepare the maple glaze by melting butter and mixing it with powdered sugar and maple syrup until smooth.
  8. Cool the bread before drizzling with glaze.
