  • ½ cup unsalted butter
  • 2⅔ cups flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ cup brown sugar
  • ½ cup sour cream
  • ½ cup whole milk
  • 1 large egg
  • Coarse sugar for sprinkling (optional)
  • ½ cup powdered sugar for glaze
  • 12 tbsp fresh squeezed lemon juice for glaze

Instructions

  1. Preheat oven to 425°F and prepare muffin tray with cooking spray.
  2. Combine molasses and butter in a bowl; microwave until melted and mix well.
  3. In another bowl, whisk together flour, ground ginger, baking soda, ground cinnamon, ground cloves, and salt.
  4. Mix brown sugar, sour cream, whole milk, and egg into the molasses mixture until smooth.
  5. Gently fold wet ingredients into dry ingredients until combined.
  6. Fill muffin cups to the top; sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F, then reduce heat to 350°F and bake for another 11-14 minutes.
  8. Cool on a wire rack before drizzling with lemon glaze.
