Ingredients
- ¾ cup unsulfured molasses
- ½ cup unsalted butter
- 2⅔ cups flour
- 2 tsp ground ginger
- 1½ tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp ground cloves
- ½ cup brown sugar
- ½ cup sour cream
- ½ cup whole milk
- 1 large egg
- Coarse sugar for sprinkling (optional)
- ½ cup powdered sugar for glaze
- 1–2 tbsp fresh squeezed lemon juice for glaze
Instructions
- Preheat oven to 425°F and prepare muffin tray with cooking spray.
- Combine molasses and butter in a bowl; microwave until melted and mix well.
- In another bowl, whisk together flour, ground ginger, baking soda, ground cinnamon, ground cloves, and salt.
- Mix brown sugar, sour cream, whole milk, and egg into the molasses mixture until smooth.
- Gently fold wet ingredients into dry ingredients until combined.
- Fill muffin cups to the top; sprinkle with coarse sugar if desired.
- Bake for 5 minutes at 425°F, then reduce heat to 350°F and bake for another 11-14 minutes.
