  • Bone-in, skin-on chicken thighs
  • Olive oil

  • Paprika

  • Dried thyme
  • Salt & pepper
  • Baby potatoes, halved
  • Garlic powder
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, coat chicken thighs with olive oil, minced garlic, paprika, oregano, thyme, salt, and pepper.
  3. In another bowl, toss halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Arrange the seasoned chicken and potatoes in a baking dish evenly.
  5. Roast uncovered for about 45–55 minutes until the chicken skin is crispy and the potatoes are tender.
  6. Garnish with fresh parsley before serving.
