Ingredients
- 500g chicken breast, cubed
- 200g mushrooms, sliced
- 300g fresh asparagus
- 1 red bell pepper, sliced
- 3 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sesame oil or vegetable oil
- Jasmine or long-grain rice
- 400ml water
- Pinch of salt
Instructions
- Cook the rice: Rinse rice until water runs clear. In a pot, combine rinsed rice with water and pinch of salt. Bring to boil, reduce heat to low, cover, and simmer for 15-20 minutes until fluffy.
- Prepare asparagus: Heat olive oil in a separate pan over medium heat. Add asparagus with salt and pepper; roast for 8-10 minutes until tender-crisp.
- Make the stir-fry: In a wok or large skillet, heat sesame oil over medium-high heat. Sauté minced garlic until fragrant (30 seconds). Add cubed chicken; cook until golden brown (5-7 minutes). Toss in mushrooms and bell pepper; cook for another 3-4 minutes. Stir in soy sauce, hoisin sauce, and cornstarch slurry; cook until thickened.
