Ingredients
- 200g shrimp, peeled & deveined
- 1 tbsp butter
- 1 garlic clove, minced
- 1 tsp paprika
- 1 cup white rice (jasmine or basmati)
- 2 cups water
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup diced carrots
- 1 tsp olive oil or additional butter for vegetables
- Salt & pepper to taste
Instructions
- Rinse the rice under cold water until clear. In a saucepan, bring water to a boil, add rice and a pinch of salt. Cover and simmer for 15 minutes.
- Steam broccoli, cauliflower, and carrots for 5–6 minutes until tender-crisp, then toss with olive oil or butter, salt, and pepper.
- In a skillet over medium-high heat, melt butter and sauté garlic until fragrant. Add shrimp with paprika, salt, and pepper. Cook for 2–3 minutes on each side until pink and slightly crispy.
- Serve the rice on one side of the plate topped with shrimp and steamed vegetables.
