  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. Brown the butter in a stainless steel pan over medium heat until amber in color, about 10 minutes. Scrape browned bits into a mixing bowl.
  2. Add ground espresso and cool the mixture to room temperature (20-30 minutes).
  3. Whisk in both sugars until combined.
  4. Incorporate the egg, egg yolk, and vanilla extract until fully mixed.
  5. Fold in flour, baking soda, salt, and chocolate until just combined.
  6. Chill the dough on a parchment-lined baking tray for at least 3-4 hours or overnight.
  7. Preheat your oven to 350°F (180°C).
  8. Bake chilled dough spaced apart on a tray for 10-12 minutes until edges are golden and centers remain puffy.
