  • 1 1/2 tsp salt
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 eggs, large
  • 1 15oz can pumpkin puree
  • 2/3 cup water
  • 1 tsp vanilla extract
  • 1/2 cup butter, cold and cubed for crumb topping
  • 3/4 cup all purpose flour for crumb topping
  • 1 tsp ground cinnamon for crumb topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8×4 bread pans.
  2. In a large bowl, combine flour, salt, baking soda, and spices until well mixed.
  3. Add granulated sugar and brown sugar; mix until combined.
  4. Create a well in the center of the dry mixture and pour in canola oil; mix until just combined.
  5. Incorporate eggs two at a time until fully blended.
  6. Stir in pumpkin puree, water, and vanilla extract until smooth.
  7. Divide batter between prepared pans.
  8. For the crumb topping, combine cold butter with flour, brown sugar, and cinnamon until crumbly; sprinkle over batter.
  9. Bake for 55–65 minutes or until a toothpick comes out clean.
  10. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
