- 2 cups granulated sugar
- 1/2 cup brown sugar
- 1 cup canola oil
- 4 eggs, large
- 1 15oz can pumpkin puree
- 2/3 cup water
- 1 tsp vanilla extract
- 1/2 cup butter, cold and cubed for crumb topping
- 3/4 cup all purpose flour for crumb topping
- 1 tsp ground cinnamon for crumb topping
Instructions
- Preheat your oven to 350°F (175°C) and grease two 8×4 bread pans.
- In a large bowl, combine flour, salt, baking soda, and spices until well mixed.
- Add granulated sugar and brown sugar; mix until combined.
- Create a well in the center of the dry mixture and pour in canola oil; mix until just combined.
- Incorporate eggs two at a time until fully blended.
- Stir in pumpkin puree, water, and vanilla extract until smooth.
- Divide batter between prepared pans.
- For the crumb topping, combine cold butter with flour, brown sugar, and cinnamon until crumbly; sprinkle over batter.
- Bake for 55–65 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes before transferring to wire racks to cool completely.
