- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 3/4 cup packed brown sugar for icing
- 1/4 cup almond milk for icing
- 1 tablespoon dairy-free butter for icing
- 1/2 teaspoon vanilla extract for icing
- 1 and 1/2 cups powdered sugar for icing
- pinch of sea salt for icing
Instructions
- Preheat your oven to 350°F and grease two donut pans.
- In a large bowl, whisk together gluten-free flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
- In another bowl, mix pumpkin puree, avocado oil (or melted coconut oil), brown sugar, sugar, eggs, almond milk, and vanilla extract until smooth.
- Combine wet and dry ingredients until just mixed; do not overmix.
- Pipe batter into donut pans and bake for 11–12 minutes until golden brown.
- Allow cooling on a wire rack before icing with brown sugar icing made from brown sugar, almond milk, dairy-free butter, powdered sugar, and vanilla extract.
