  • 1 cup pumpkin puree
  • 1/2 cup avocado oil or melted refined coconut oil
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup sugar
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 3/4 cup packed brown sugar for icing
  • 1/4 cup almond milk for icing
  • 1 tablespoon dairy-free butter for icing
  • 1/2 teaspoon vanilla extract for icing
  • 1 and 1/2 cups powdered sugar for icing
  • pinch of sea salt for icing

Instructions

  1. Preheat your oven to 350°F and grease two donut pans.
  2. In a large bowl, whisk together gluten-free flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and sea salt.
  3. In another bowl, mix pumpkin puree, avocado oil (or melted coconut oil), brown sugar, sugar, eggs, almond milk, and vanilla extract until smooth.
  4. Combine wet and dry ingredients until just mixed; do not overmix.
  5. Pipe batter into donut pans and bake for 11–12 minutes until golden brown.
  6. Allow cooling on a wire rack before icing with brown sugar icing made from brown sugar, almond milk, dairy-free butter, powdered sugar, and vanilla extract.
