Ingredients

  • 1/2 cup Canola or vegetable oil
  • 1/4 cup minced garlic
  • 1 thinly sliced shallot
  • 89 oz dried ramen noodles
  • 1 tbsp Korean chili flakes
  • 3 tbsp reduced-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a medium saucepan, combine the canola oil, minced garlic, and sliced shallots over low heat. Simmer for about 5-6 minutes until the garlic is golden brown and the shallots are caramelized.
  2. Stir in grated ginger, chili flakes, sesame seeds, sugar, and sesame oil; cook for an additional minute.
  3. Add rice vinegar and soy sauce; bring to a gentle simmer before removing from heat. Mix in sliced green onions.
  4. Boil water in a large pot and cook ramen noodles according to package instructions until al dente; drain.
  5. Toss the hot noodles in the infused chili oil mixture until well-coated. Garnish with scallions and sesame seeds before serving.
