- 2 1/2 – 3 cups white whole wheat or all-purpose flour
- 1 packet (2 1/4 teaspoons) instant yeast
- 1/4 teaspoon kosher salt
- 1 cup warm water or warm milk
- 2 teaspoons honey
- 7 tablespoons salted butter (room temperature)
- 1/4 cup granulated sugar
- 3 teaspoons cinnamon
- 1/2 cup brown sugar
- 1 cup powdered sugar
- 2 tablespoons cream cheese (room temperature)
- 1 teaspoon pure vanilla extract
Instructions
- In a stand mixer bowl with the dough hook, combine flour, instant yeast, and salt. Add warm water (or milk), honey, and 1 tablespoon of butter. Knead on medium speed until smooth (about 1-2 minutes). Allow the dough to rise covered in a warm place for about 30 minutes to an hour.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix granulated sugar and cinnamon in a bowl for the filling.
- Roll out the dough into a rectangle about 1/4 inch thick on a floured surface. Spread with remaining butter and sprinkle with cinnamon sugar mixture. Fold in half, cut into strips, twist into knots and place on the prepared baking sheet.
- Melt remaining butter mixed with brown sugar and cinnamon; spoon over each knot.
- Bake for about 8-10 minutes until golden brown; remove from oven and drizzle any melted brown sugar back over rolls before returning to bake another 8-10 minutes.
- For the glaze, beat together powdered sugar, cream cheese, vanilla extract, and water until smooth; adjust consistency as needed.
- Drizzle glaze over warm knots before serving.
