- 6 ounces whole dates (3/4 cup)
- 1 cup cake flour
- 1 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1/2 teaspoon salt
- Pinch nutmeg
- 3/4 cup vegetable oil (I use avocado oil; canola oil can also be used)
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 large eggs
- 1 teaspoon vanilla
- 1/2 cup chopped walnuts
- Nonstick cooking spray
Instructions
- Preheat your oven to 325°F (163°C). Soak the dates in very hot water while you prepare the batter.
- In a large mixing bowl, sift together cake flour, baking powder, cinnamon, salt, and nutmeg.
- In another bowl, whisk vegetable oil, brown sugar, honey, eggs, and vanilla until well combined.
- Pour the wet mixture into the dry ingredients and stir until thick batter forms.
- Drain and chop soaked dates; fold them along with chopped walnuts into the batter.
- Grease a loaf pan with nonstick cooking spray and pour in the batter.
- Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool before serving.
