  • 6 ounces whole dates (3/4 cup)
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Pinch nutmeg
  • 3/4 cup vegetable oil (I use avocado oil; canola oil can also be used)
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 325°F (163°C). Soak the dates in very hot water while you prepare the batter.
  2. In a large mixing bowl, sift together cake flour, baking powder, cinnamon, salt, and nutmeg.
  3. In another bowl, whisk vegetable oil, brown sugar, honey, eggs, and vanilla until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until thick batter forms.
  5. Drain and chop soaked dates; fold them along with chopped walnuts into the batter.
  6. Grease a loaf pan with nonstick cooking spray and pour in the batter.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool before serving.
