  • 3/4 cup cake flour
  • 1 tsp salt
  • 1 cup warm milk
  • 3 tbsp unsalted butter
  • 3 tbsp granulated sugar
  • 2 tsp instant yeast
  • 1 egg (for dough)
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 carrot, diced
  • 3 potatoes, peeled and cubed
  • 0.3 lbs ground beef
  • 1 tbsp soy sauce
  • 1 tbsp ketchup
  • 3 cubes Japanese curry roux
  • 1 cup water
  • 1 tbsp cornstarch
  • 1 egg (beaten, for coating)
  • 1 1/2 cups panko breadcrumbs

Instructions

  1. In a bowl, mix bread flour, cake flour, salt, sugar, and instant yeast.
  2. Heat warm milk with melted butter; combine with dry ingredients.
  3. Knead in one egg until smooth; let rise for about 60 minutes.
  4. For the filling: Sauté onion in vegetable oil, add carrot and potatoes, then ground beef until browned. Stir in soy sauce, ketchup, curry roux, and water; simmer until thickened.
  5. Punch down risen dough and divide into portions; roll out circles and fill with curry mixture. Seal tightly.
  6. Coat each bun in beaten egg and panko, then fry until golden brown.
