- 2 sheets puff pastry (thawed)
- ⅔ cup granulated sugar
- ½ cup cornstarch
- ¼ tsp kosher salt
- 3½ cups whole milk (warm)
- 6 large egg yolks (room temperature)
- 1 vanilla bean (seeds scraped) or 2 tsp vanilla bean paste
- 4 tbsp unsalted butter (cold, cubed)
- Powdered sugar (for dusting)
Instructions
- Preheat oven to 400°F (200°C). Line two baking trays with parchment paper.
- Roll out puff pastry sheets to about 9×9 inches and prick with a fork. Place on trays and weigh down.
- Bake for 35–45 minutes until golden brown and crisp. Let cool completely.
- Trim edges to fit an 8×8-inch pan using a serrated knife.
- In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks and mix well.
- Warm milk in another saucepan until steaming but not boiling.
- Slowly add warm milk to the egg mixture while whisking continuously; then combine with remaining warm milk.
- Cook over medium heat while whisking until thickened and bubbly (about 5–7 minutes). Remove from heat; stir in vanilla seeds and butter until smooth.
- Line the pan with aluminum foil; place one piece of pastry at the bottom, pour custard on top, then add another layer of pastry on top.
- Cover and refrigerate for at least 4 hours or overnight before slicing.
