  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped) or 2 tsp vanilla bean paste
  • 4 tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking trays with parchment paper.
  2. Roll out puff pastry sheets to about 9×9 inches and prick with a fork. Place on trays and weigh down.
  3. Bake for 35–45 minutes until golden brown and crisp. Let cool completely.
  4. Trim edges to fit an 8×8-inch pan using a serrated knife.
  5. In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks and mix well.
  6. Warm milk in another saucepan until steaming but not boiling.
  7. Slowly add warm milk to the egg mixture while whisking continuously; then combine with remaining warm milk.
  8. Cook over medium heat while whisking until thickened and bubbly (about 5–7 minutes). Remove from heat; stir in vanilla seeds and butter until smooth.
  9. Line the pan with aluminum foil; place one piece of pastry at the bottom, pour custard on top, then add another layer of pastry on top.
  10. Cover and refrigerate for at least 4 hours or overnight before slicing.
