  • 300g boneless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • 150ml chicken broth
  • 150ml heavy cream
  • 1 tbsp tomato paste
  • 1 cup basmati rice
  • 2 cups water
  • Pinch of salt
  • Fresh parsley, chopped

Instructions

  1. Cook the basmati rice in salted water until fluffy; set aside.
  2. Season chicken with smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Brown the chicken for about 5–7 minutes; remove from skillet.
  3. In the same skillet, melt butter and sauté onion, red bell pepper, and garlic until softened (about 4–5 minutes). Stir in smoked and sweet paprika along with tomato paste.
  4. Add chicken broth to the skillet; let it simmer for 3–4 minutes. Pour in heavy cream and return the browned chicken to the pan. Cook until the sauce thickens (around 5–7 minutes).
  5. Serve hot over fluffy rice, garnished with freshly chopped parsley.
