  • 1 tablespoon vegetable oil
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 rings (13 ounces each) smoked turkey sausage, sliced
  • 2 cans Great Northern white beans, rinsed and drained
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add sliced smoked turkey sausage and brown on both sides for about 7-9 minutes. Remove and set aside.
  2. In the same pot, melt butter and add onion, carrots, garlic, salt, and pepper. Cook for 10-12 minutes until vegetables are softened.
  3. Sprinkle flour over the vegetables; stir well and cook for an additional minute.
  4. Pour in chicken broth and milk; stir to combine and bring to a simmer.
  5. Return the browned sausage to the pot along with rinsed beans. Reduce heat to medium-low and simmer for 15-20 minutes until thickened.
