Ingredients

  • 2 sheets vegan gelatin (4g)
  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Gooey cocoa spread
  • 80g powdered sugar (for mousse)
  • 120g powdered sugar (for shortbread)
  • A pinch of sea salt
  • 1/2 sachet baking powder
  • 3 egg yolks
  • Grated coconut

Instructions

  1. Whip heavy cream and mascarpone until soft peaks form; chill.
  2. Soak vegan gelatin sheets in cold water. Heat coconut milk and dissolve gelatin.
  3. Fold gelatin mixture into whipped cream and pour into hemisphere molds, adding chocolate spread halfway. Freeze for at least 6 hours.
  4. Mix remaining ingredients to form dough; chill, roll out, cut shapes, and bake for about 10 minutes at 180°C (350°F). Cool completely.
  5. Assemble by placing domes on shortbread bases and garnish with grated coconut before serving.
