  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 1 cup beef broth
  • Juice of 1 lime

Instructions

  2. In a Dutch oven or slow cooker, heat vegetable oil over medium-high heat. Brown the beef cubes on all sides in batches.
  3. Add chopped onion, minced garlic, and grated ginger to the pot; sauté until onions are translucent (about 5 minutes).
  4. Stir in red curry paste and spices; cook until fragrant (1-2 minutes).
  5. Add coconut milk, beef broth, and lime juice; mix well.
  6. Cover and slow cook: simmer on low for about 3 hours (Dutch oven) or set to low for 6 hours/high for 4 hours (slow cooker).
