  • 2 lbs beef chuck roast, cut into large chunks
  • 1 tbsp coconut oil
  • 1 large yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 (14 oz) can full-fat coconut milk

Instructions

  1. Heat coconut oil in a heavy pot over medium heat. Add onion and sauté until translucent. Stir in garlic and ginger; cook for one minute until fragrant.
  2. Add curry powder, turmeric, coriander, and chili flakes (if using). Toast the spices for about two minutes.
  3. Brown the beef chunks on all sides in the pot.
  4. Stir in tomato paste followed by coconut milk; mix well.
  5. Bring to a gentle boil, then reduce heat to low and cover. Simmer for about two hours until beef is tender, stirring occasionally.
  6. Adjust seasoning if needed and serve hot over rice or with fries.
