- 2 lbs beef chuck roast, cut into large chunks
- 1 tbsp coconut oil
- 1 large yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground coriander
- 1/2 tsp chili flakes (optional)
- 1 tbsp tomato paste
- 1 (14 oz) can full-fat coconut milk
Instructions
- Heat coconut oil in a heavy pot over medium heat. Add onion and sauté until translucent. Stir in garlic and ginger; cook for one minute until fragrant.
- Add curry powder, turmeric, coriander, and chili flakes (if using). Toast the spices for about two minutes.
- Brown the beef chunks on all sides in the pot.
- Stir in tomato paste followed by coconut milk; mix well.
- Bring to a gentle boil, then reduce heat to low and cover. Simmer for about two hours until beef is tender, stirring occasionally.
- Adjust seasoning if needed and serve hot over rice or with fries.
