Description

  • 2 diced carrots
  • 2 diced celery stalks
  • 1 diced medium onion
  • 4 oz chopped turkey strips
  • 1 can whole plum tomatoes (28 oz)
  • 1 can cannellini beans
  • 3/4 cup ditalini pasta
  • 4 cups chicken broth
  • Fresh basil
  • 2 bay leaves
  • 1 tbsp oregano
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 bag spinach, chopped

Instructions

  1. In a large Dutch oven, sauté chopped turkey strips over medium heat until crispy (about 8 minutes). Add olive oil, carrots, celery, and onions; sauté until softened (about 10 minutes). Season with half of the salt, pepper, and oregano.
  2. Make a well in the vegetables and caramelize the tomato paste for 3 minutes before mixing it in.
  3. Stir in crushed tomatoes, basil, remaining seasonings, and bay leaves; bring to a simmer.
  4. Add chicken stock and parmesan rind; boil then reduce to simmer for about 15 minutes.
  5. Mix in cannellini beans and ditalini pasta; simmer for another 15 minutes until pasta is tender.
  6. Incorporate chopped spinach; cover for 3 minutes before serving.
