- 2 diced celery stalks
- 1 diced medium onion
- 4 oz chopped turkey strips
- 1 can whole plum tomatoes (28 oz)
- 1 can cannellini beans
- 3/4 cup ditalini pasta
- 4 cups chicken broth
- Fresh basil
- 2 bay leaves
- 1 tbsp oregano
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 bag spinach, chopped
Instructions
- In a large Dutch oven, sauté chopped turkey strips over medium heat until crispy (about 8 minutes). Add olive oil, carrots, celery, and onions; sauté until softened (about 10 minutes). Season with half of the salt, pepper, and oregano.
- Make a well in the vegetables and caramelize the tomato paste for 3 minutes before mixing it in.
- Stir in crushed tomatoes, basil, remaining seasonings, and bay leaves; bring to a simmer.
- Add chicken stock and parmesan rind; boil then reduce to simmer for about 15 minutes.
- Mix in cannellini beans and ditalini pasta; simmer for another 15 minutes until pasta is tender.
- Incorporate chopped spinach; cover for 3 minutes before serving.
