  • 1 head of romaine lettuce – 4-5 cups, chopped
  • 1 cup sliced cherry tomatoes
  • 1/2 cup chopped cucumber
  • 1/2 cup shredded carrots, chopped or matchstick carrots
  • 1/3 cup diced or sliced red onion
  • 1 cup croutons
  • 1/4 cup red apple vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mason jar, combine 1/4 cup of red apple vinegar, 1/2 cup of extra virgin olive oil, 1 tablespoon of Dijon mustard, 1 tablespoon of maple syrup, 1 teaspoon each of dried oregano and garlic powder, and season with salt and pepper. Shake well until emulsified.
  2. In a large bowl, combine the chopped romaine lettuce (4-5 cups), sliced cherry tomatoes (1 cup), chopped cucumber (1/2 cup), shredded carrots (1/2 cup), diced red onion (1/3 cup), and croutons (1 cup).
  3. Drizzle the vinaigrette over the salad and toss gently until everything is well coated.
