- 1 cup cold, unsalted butter, cubed
- 1 1/4 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 tsp. vanilla extract
- 1 cup packed brown sugar
- 6 Tbsp. softened butter
- 2 Tbsp. cinnamon
- 8 oz. cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 1/2 cups confectioners sugar
- 1 tsp. vanilla extract
- 1/2 tsp. salt
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, mix brown sugar, softened butter, and cinnamon until smooth; set aside.
- In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
- In a stand mixer, cream cold cubed butter and granulated sugar until fluffy. Add eggs and vanilla; mix well.
- Gradually incorporate the dry ingredients until combined into dough.
- Shape the dough into a rectangle on a floured surface; spread with cinnamon filling.
- Roll up tightly and slice into 10–12 cookies.
- Place on a lined baking sheet and bake for 9–11 minutes until edges are golden brown.
- Cool before frosting with cream cheese mixture.
