  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon until smooth; set aside.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In a stand mixer, cream cold cubed butter and granulated sugar until fluffy. Add eggs and vanilla; mix well.
  5. Gradually incorporate the dry ingredients until combined into dough.
  6. Shape the dough into a rectangle on a floured surface; spread with cinnamon filling.
  7. Roll up tightly and slice into 10–12 cookies.
  8. Place on a lined baking sheet and bake for 9–11 minutes until edges are golden brown.
  9. Cool before frosting with cream cheese mixture.
