  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the brown sugar, softened butter, and cinnamon until smooth for the filling.
  3. In a large bowl, whisk together all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
  4. In your stand mixer, cream cold cubed butter until fluffy; add granulated sugar and mix until smooth.
  5. Incorporate eggs and vanilla extract into the creamed mixture.
  6. Gradually add the dry ingredient mixture until fully combined.
  7. Press the cookie dough into a rectangle and spread the cinnamon filling evenly on top.
  8. Roll up tightly to form a log and slice into 10–12 pieces.
  9. Bake for 9–11 minutes until lightly golden; cool before frosting with cream cheese frosting.
