Ingredients

  • 3 large eggs
  • 1 cup vegetable oil
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 cups grated zucchini (un-drained)
  • 12 oz semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350ºF and prepare two greased loaf tins.
  2. In a mixing bowl, whisk together sugar, eggs, oil, and vanilla.
  3. Add flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg; mix until combined.
  4. Fold in grated zucchini and 8 oz of chocolate chips.
  5. Divide batter between the prepared tins and top with remaining chocolate chips.
  6. Bake for 50-60 minutes until a toothpick comes out clean. Allow to cool before serving.
