  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, add olive oil and sear seasoned chicken for 5-6 minutes per side until golden brown. Set aside.
  3. Sauté garlic in the same skillet for 1 minute, then add mushrooms and cook for about 5 minutes until softened. Stir in spinach until wilted.
  4. Add heavy cream and chicken broth to the skillet; simmer for 3-4 minutes until thickened.
  5. Place cooked chicken in the baking dish; pour sauce over it and top with mozzarella and Parmesan.
