  • Salt & black pepper to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 oz cream cheese
  • 12 oz twisted pasta (like rotini or fusilli)
  • Chopped parsley for garnish

Instructions

  1. Cook the twisted pasta in salted boiling water until al dente; drain and set aside.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown (5-6 minutes). Transfer to a plate.
  3. In the same skillet, melt butter, add minced garlic, and sauté for about a minute. Stir in chicken broth and heavy cream, scraping the pan's bottom.
  4. Lower the heat, mix in cream cheese, mozzarella, and Parmesan until melted into a smooth sauce. If too thick, add reserved pasta water gradually.
  5. Combine cooked pasta and chicken with the sauce; toss to coat evenly. Simmer for an additional 2 minutes.
  6. Serve hot garnished with fresh parsley.
