  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. 1. Bring a large pot of salted water to a boil.
  2. 2. Add linguine and cook until al dente, about 9-10 minutes.
  3. 3. Reserve ½ cup of pasta water, then drain linguine and set aside.
  4. 4. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons butter.
  5. 5. Add chicken chunks and season with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
  6. 6. Sear the chicken for about 8-10 minutes, turning occasionally until golden-brown and fully cooked. Remove chicken from skillet and set aside.
  7. 7. In the same skillet, melt 2 tablespoons butter over medium heat.
  8. 8. Add minced garlic and sauté for about 1 minute until fragrant.
  9. 9. Pour in heavy cream and milk; stir to bring to a gentle simmer.
  10. 10. Add Velveeta cubes; cook while stirring constantly until melted smoothly into the sauce.
  11. 11. Stir in mozzarella and Parmesan cheeses until melted, thickening the sauce.
  12. 12. Season with salt and pepper to taste; if too thick, add reserved pasta water as needed.
  13. 13. Add drained linguine to the sauce; toss well to coat each strand in cheesy goodness.
