- 1 lb boneless skinless chicken breasts, cut into bite-sized chunks
- 12 oz linguine pasta
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup whole milk
- 6 oz Velveeta cheese, cubed
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- 1. Bring a large pot of salted water to a boil.
- 2. Add linguine and cook until al dente, about 9-10 minutes.
- 3. Reserve ½ cup of pasta water, then drain linguine and set aside.
- 4. In a large skillet over medium-high heat, heat olive oil and 2 tablespoons butter.
- 5. Add chicken chunks and season with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
- 6. Sear the chicken for about 8-10 minutes, turning occasionally until golden-brown and fully cooked. Remove chicken from skillet and set aside.
- 7. In the same skillet, melt 2 tablespoons butter over medium heat.
- 8. Add minced garlic and sauté for about 1 minute until fragrant.
- 9. Pour in heavy cream and milk; stir to bring to a gentle simmer.
- 10. Add Velveeta cubes; cook while stirring constantly until melted smoothly into the sauce.
- 11. Stir in mozzarella and Parmesan cheeses until melted, thickening the sauce.
- 12. Season with salt and pepper to taste; if too thick, add reserved pasta water as needed.
- 13. Add drained linguine to the sauce; toss well to coat each strand in cheesy goodness.
- 14. Plate cheesy linguine generously.
- 15. Top with juicy Cajun chicken bites.
- 16. Sprinkle with chopped parsley if desired.
