- 3/4 teaspoon fine sea salt
- 1/2 cup water
- 1 tbsp apple cider vinegar
- 3 cups fresh sliced peaches
- 3 cups fresh strawberries, hulled and quartered
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- Turbinado sugar (optional)
Instructions
- Prepare the brown butter crust by melting the cold unsalted butter in a skillet over medium heat until golden brown. Let cool slightly.
- In a large bowl, mix flour and fine sea salt. Add cooled brown butter, water, and vinegar; combine to form a dough. Refrigerate for at least 30 minutes.
- For the filling, mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, and salt.
- Preheat oven to 375°F (190°C). Roll out half the dough for the base in a pie dish. Fill with fruit mixture and cover with remaining rolled-out dough. Seal edges.
