  • 3/4 teaspoon fine sea salt
  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Turbinado sugar (optional)

Instructions

  1. Prepare the brown butter crust by melting the cold unsalted butter in a skillet over medium heat until golden brown. Let cool slightly.
  2. In a large bowl, mix flour and fine sea salt. Add cooled brown butter, water, and vinegar; combine to form a dough. Refrigerate for at least 30 minutes.
  3. For the filling, mix sliced peaches and strawberries with sugar, cornstarch, lemon juice, and salt.
  4. Preheat oven to 375°F (190°C). Roll out half the dough for the base in a pie dish. Fill with fruit mixture and cover with remaining rolled-out dough. Seal edges.
  5. Brush top with whisked egg and sprinkle with Turbinado sugar if desired. Bake for about 70 minutes or until golden brown.
