- 1 lb kielbasa sausage, sliced
- 1 lb cheese tortellini (fresh or frozen)
- 2 cups bell peppers, diced
- 1 cup red onion, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- Italian seasoning, smoked paprika, salt, and pepper to taste
- Fresh parsley and grated Parmesan cheese for garnish
Instructions
- Preheat your Blackstone grill to medium-high heat.
- Boil salted water in a large pot; add tortellini and cook for 3-5 minutes. Drain and set aside.
- In a mixing bowl, combine bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper.
- Add sliced kielbasa to the grill; sear for 3-4 minutes until browned.
- Push kielbasa to one side; add seasoned vegetables to the other side of the grill and cook for another 5-7 minutes.
- Mix in the drained tortellini; toss gently to combine and heat through for about 2-3 minutes.
- Adjust seasoning as needed; garnish with fresh parsley before serving.
