  • 1 lb kielbasa sausage, sliced
  • 1 lb cheese tortellini (fresh or frozen)
  • 2 cups bell peppers, diced
  • 1 cup red onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Italian seasoning, smoked paprika, salt, and pepper to taste
  • Fresh parsley and grated Parmesan cheese for garnish

Instructions

  1. Preheat your Blackstone grill to medium-high heat.
  2. Boil salted water in a large pot; add tortellini and cook for 3-5 minutes. Drain and set aside.
  3. In a mixing bowl, combine bell peppers, red onion, garlic, olive oil, Italian seasoning, smoked paprika, salt, and pepper.
  4. Add sliced kielbasa to the grill; sear for 3-4 minutes until browned.
  5. Push kielbasa to one side; add seasoned vegetables to the other side of the grill and cook for another 5-7 minutes.
  6. Mix in the drained tortellini; toss gently to combine and heat through for about 2-3 minutes.
