Ingredients

- 1/4 cup (50 g) granulated white sugar

- 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
- 1/2 cup (40 g) black cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup (168 g) unsalted butter, softened
- 3/4 cup (165 g) light brown sugar, packed
- 1/4 cup (50 g) granulated white sugar
- 2 egg yolks, at room temperature
- 1 1/2 tsp vanilla
Instructions
- For the cheesecake filling, combine cream cheese, granulated sugar, and vanilla in a stand mixer until smooth.
- In a separate bowl, mix flour, black cocoa powder, baking powder, and salt.
- Cream softened butter with light brown and granulated sugars until fluffy. Add egg yolks and vanilla; mix well.
- Gradually incorporate dry ingredients into the wet mixture until just combined.
- Scoop portions of dough, flatten slightly, place cheesecake filling in the center, fold dough around it, and roll into balls coated in black cocoa sugar.
- Preheat oven to 350°F (175°C) and bake cookie balls on a lined baking sheet for 10-12 minutes until set but soft in the center.
