  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. For the cheesecake filling, combine cream cheese, granulated sugar, and vanilla in a stand mixer until smooth.
  2. In a separate bowl, mix flour, black cocoa powder, baking powder, and salt.
  3. Cream softened butter with light brown and granulated sugars until fluffy. Add egg yolks and vanilla; mix well.
  4. Gradually incorporate dry ingredients into the wet mixture until just combined.
  5. Scoop portions of dough, flatten slightly, place cheesecake filling in the center, fold dough around it, and roll into balls coated in black cocoa sugar.
  6. Preheat oven to 350°F (175°C) and bake cookie balls on a lined baking sheet for 10-12 minutes until set but soft in the center.
  7. Cool on the baking sheet for a few minutes before transferring to wire racks.
