  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F. Line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or butter), and vanilla extract until smooth. Gradually add the dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth. Mix in sugar, egg yolk, and vanilla until fully incorporated.
  5. Fill each muffin cup with batter up to three-quarters full and add a tablespoon of cream cheese mixture on top. Use a toothpick to swirl gently.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean with just a few crumbs attached. Allow cooling for 10 minutes before serving.
