- 1/2 cup vegetable oil

- 8 oz cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk (room temperature)
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 375°F. Line a muffin pan with paper baking cups.
- In a medium bowl, whisk together the flour, pumpkin spice, baking soda, and salt.
- In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil (or butter), and vanilla extract until smooth. Gradually add the dry ingredients until just combined.
