  • 2 large eggs
  • 1/2 cup vegetable oil

  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add the dry ingredients until just combined.
  4. In another bowl, beat the cream cheese with sugar, egg yolk, and vanilla until smooth.
  5. Fill each muffin tin about 3/4 full with batter. Top with approximately 1 tablespoon of cream cheese mixture and swirl gently using a toothpick.
  6. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
