- 5–6 persian cucumbers, diced
- 1/4 cup chopped fresh dill
- 1/4 cup chopped parsley
- Salt and pepper, to taste
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon grated lemon peel
Instructions
- Bring a large pot of salted water to a boil. Add 8 ounces of dried orzo pasta and cook according to package instructions (about 8 minutes). Drain using a colander and rinse under cold water until cool.
- In a mixing bowl, whisk together 1/4 cup extra virgin olive oil, 1/4 cup freshly squeezed lemon juice, and 1 teaspoon grated lemon peel until well combined.
