- 1 cup long-grain white rice
- 2 cups chicken or vegetable broth
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 1/4 cup tomato sauce
- 1/2 cup frozen peas (optional)
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook until fragrant.
- Add the rinsed rice to the pan and toast for about 2-3 minutes until slightly golden.
- Mix in the diced tomato and tomato sauce, allowing them to combine for about a minute. Pour in the broth and season with salt.
- Bring to a boil, then reduce heat to low and cover the pot. Simmer for 15-20 minutes or until all liquid is absorbed.
- If using frozen peas, stir them in during the last few minutes of cooking. Once done, let sit covered for an additional 5 minutes before fluffing with a fork.
