Description

Authentic Mexican Rice is a vibrant, flavorful side dish that effortlessly enhances any meal. With its beautiful colors and aromatic ingredients, this dish is not only quick to prepare but also incredibly versatile.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1/4 cup tomato sauce
  • 1/2 cup frozen peas (optional)
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook until fragrant.
  2. Add the rinsed rice to the pan and toast for about 2-3 minutes until slightly golden.
  3. Mix in the diced tomato and tomato sauce, allowing them to combine for about a minute. Pour in the broth and season with salt.
  4. Bring to a boil, then reduce heat to low and cover the pot. Simmer for 15-20 minutes or until all liquid is absorbed.
  5. If using frozen peas, stir them in during the last few minutes of cooking. Once done, let sit covered for an additional 5 minutes before fluffing with a fork.
