  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Cream softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together flour, baking powder, salt, cinnamon, and nutmeg in a separate bowl.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Fold in the diced apple gently.
  7. Spread the batter evenly in the prepared pan and sprinkle with cinnamon-sugar topping.
  8. Bake for 25–30 minutes or until golden brown; check doneness with a toothpick.
