  • 3 tbsp granulated white sugar
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 6 oz cream cheese, cold
  • 2 egg yolks, at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction from above
  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 12 tbsp salted butter, melted

Instructions

  1. Reduce apple cider in a saucepan over medium heat until slightly thickened; cool.
  2. Beat cream cheese with sugar until smooth; add egg yolks and vanilla.
  3. Cream softened butter with sugars, then mix in reduced apple cider.
  4. Combine dry ingredients and stir into the butter mixture until just combined.
  5. Preheat oven to 350°F (175°C). Scoop dough, add cheesecake filling, shape into balls, and place on parchment-lined baking sheet.
  6. Bake for about 11 minutes; brush with melted butter and sprinkle with spiced sugar topping.
